Flytande honung fr\u00e5n svenska bin stelnar (kristalliseras) alltid f\u00f6rr eller senare och kan d\u00e5 bli ganska grovkornig och uppfattas som grusig. Man kan d\u00e5 f\u00f6rsiktigt v\u00e4rma honungen i vattenbad till cirka 40 grader f\u00f6r att f\u00e5 honungen att \u00e5terf\u00e5 sin ursprungliga form. D\u00e5 tills\u00e4tts en liten del redan kristalliserad honung, r\u00f6rs om en g\u00e5ng, tappas p\u00e5 burk och st\u00e4lls sedan svalt i cirka en vecka. D\u00e5 p\u00e5skyndas processen och kristallerna blir av samma storlek som i den inblandade honungen. Man har nu en mjuk, len och h\u00e5llbar honung.<\/p>\n<\/div>\n<\/div>\n\n\n\n<h2 class=\"wp-block-heading\">F\u00f6rvaring<\/h2>\n\n\n\n<p>Honung ska helst f\u00f6rvaras m\u00f6rkt och i j\u00e4mn temperatur. Har du en \u00f6ppnad burk som du anv\u00e4nder ofta kan du f\u00f6rvara den i ett sk\u00e5p, eller p\u00e5 k\u00f6ksb\u00e4nken om det inte \u00e4r i direkt solljus. St\u00f6rre m\u00e4ngder som ska f\u00f6rvaras l\u00e4ngre tid b\u00f6r st\u00e5 m\u00f6rkt och svalt, helst runt ca. 14 grader.<\/p>\n\n\n\n<p>Honung g\u00e5r ocks\u00e5 bra att frysa. Honungen krymper n\u00e4r den fryser, s\u00e5 det g\u00e5r bra att st\u00e4lla in glasburken i frysen. Nyslungad honung f\u00f6rblir flytande n\u00e4r den tinas upp, men kan stelna ganska snart d\u00e4refter med finkorniga kristaller.<\/p>\n\n\n\n<p>Honung som blivit h\u00e5rd eller n\u00e4r man vill tina upp fryst honung s\u00e5 f\u00e5r man aldrig anv\u00e4nda mikrov\u00e5gsugn. D\u00e5 f\u00f6rst\u00f6rs mycket av honungens nyttiga egenskaper.
